Made with Nutrafarms’ heritage pork Farmers Sausage, these meatballs are incredibly tender thanks to a clever breadcrumb-free batter mixture. A quick bake keeps them light and juicy, and finishing them in warm red sauce brings everything together with rich, comforting flavour.

Perfect for pasta night, stuffing into a sub, building a rice bowl, or snacking straight from the pan — no judgement here.

🛒 Ingredients

For the Meatballs

  • Nutrafarms Farmers Sausage (removed from casing)
  • ¼ cup batter
  • ¼ cup whole milk
  • ½ yellow onion, finely chopped (Chopping instead of grating keeps the mixture from getting too wet — essential when using batter.)
  • 5 cloves garlic, minced
  • Salt & pepper to taste
  • ½ cup Parmesan cheese
  • ¼ cup chopped parsley
  • 1 whisked egg

For Finishing

  • Your favourite red sauce
  • Extra Parmesan for serving

🍳 Instructions

1. Make the Meatball Mixture

In a large bowl, combine: Farmers sausage, batter, whole milk, garlic, salt, pepper, Parmesan, parsley, and the whisked egg. Mix gently with your hands until just combined. Add the finely chopped onion last and fold it in.

Pro Tip: Mix well but not aggressively — over-mixing leads to dense meatballs.

2. Bake

Preheat your oven to 400°F. Roll the mixture into meatballs and place them on a lined baking tray. Bake for 15 minutes, flipping halfway for even browning.

3. Simmer in Sauce

Warm your favourite red sauce in a pot. Add your baked meatballs and simmer for 10 minutes, flipping once.

This step infuses flavour and keeps the meatballs unbelievably tender.

4. Serve Your Way

These meatballs are endlessly versatile:

  • Tossed with pasta

  • Over a bowl of rice

  • Stuffed into a toasted sub
