Ingredients

For the Crispy Rice

  • 3 cups cooked day-old rice
  • 1 tbsp soy sauce
  • 1 tsp chili oil or chili crisp

For the Salmon

  • 2 Nutrafarms salmon fillets
  • Fresh cracked black pepper, to taste
  • 2 tsp Dijon mustard

For the Salad

  • 3–4 baby cucumbers, thinly sliced
  • ¼ red onion, thinly sliced
  • 4–5 green onions, thinly sliced
  • 1 cup shelled edamame
  • ¾ cup feta cheese, crumbled
  • ¼ cup fresh cilantro, chopped

Spicy Mayo

  • ¼ cup mayonnaise
  • Sriracha, to taste (start with 1–2 tbsp and adjust as desired)

🍳 Instructions

1. Make the Crispy Ric

Preheat your oven to 400°F (200°C).
In a bowl, combine the day-old rice with the soy sauce and chili oil (or chili crisp). Toss until evenly coated.
Spread the rice into a thin, even layer on a parchment-lined baking sheet. Bake for 18 minutes, or until the rice is golden and crispy around the edges.

2. Cook the Salmo

Season the Nutrafarms salmon fillets with fresh cracked black pepper and spread the Dijon mustard evenly over the top.
Air fry at 400°F for 12 minutes, or until the salmon flakes easily with a fork.

3. Prepare the Salad

While the salmon and rice cook, combine the cucumbers, red onion, green onions, edamame, feta, and fresh cilantro in a large bowl.
In a separate bowl, whisk together the mayonnaise and Sriracha until smooth. Adjust the amount of Sriracha to suit your preferred spice level.

4. Assemble

Flake the cooked salmon into large pieces and add it to the salad.
Add the warm crispy rice, drizzle over the spicy mayo, and gently toss until everything is evenly coated.
Serve immediately while the rice is still warm and crunchy.
For an extra-fun twist, scoop everything into roasted seaweed sheets for the perfect handheld bite.
