If you're looking for a fun twist on a poke bowl, this Tuna Poke Dot Cake is about to be your new obsession. Layered with marinated Ahi tuna, sticky sushi rice, creamy avocado, fresh cucumber, sweet mango, and topped with a spicy mayo "frosting" and chive sprinkles, it's as beautiful as it is delicious.

Bonus: it's the perfect way to use up leftover sticky rice from the day before!

Ingredients

For the Tuna Marinade

  • 1 package Nutrafarms Ahi Tuna Poke Cubes
  • ⅔ cup soy sauce
  • 2 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tsp honey
  • 2 cloves garlic, crushed
  • 2 green onion stems, finely sliced

For the Dot Cake Layers

  • 2 cups cooked sushi rice or sticky rice (fresh or leftover)
  • 1 avocado, thinly sliced
  • 1 mango, diced into small cubes
  • ½ cucumber, thinly sliced
  • 2-3 sheets roasted seaweed, crushed

For the Spicy Mayo "Frosting"

  • 3 tbsp mayonnaise
  • 1 tbsp gochujang
  • ½ tbsp honey

Garnish

  • Fresh chives, finely chopped

🍳 Instructions

Step 1: Marinate the Tuna

In a bowl, whisk together the soy sauce, rice wine vinegar, sesame oil, honey, crushed garlic, and sliced green onions.

Add the Nutrafarms Ahi Tuna Poke Cubes and gently toss until every piece is coated. Cover and refrigerate for at least 30 minutes. The longer it marinates, the more flavourful it becomes.

While the tuna marinates:

  • Thinly slice the avocado
  • Dice the mango into small cubes
  • Thinly slice the cucumber
  • Crush the seaweed sheets into small pieces

Step 3: Make the Spicy Mayo

In a small bowl, mix together the mayonnaise, gochujang, and honey until smooth and creamy.

Step 4: Assemble the Dot Cake

Using a small bowl, ramekin, coupe glass, or dessert cup, begin layering:

Step 5: Decorate

Spread the spicy mayo over the top just like frosting on a cake.
