Spicy, savoury, slightly sweet and packed with protein, these Creamy Gochujang Beef Noodles are an easy addition to our Resolution Ready Meal Prep Series.
The creamy gochujang sauce gets its texture from blended fat-free cottage cheese, while Nutrafarms ground beef adds a hearty source of protein. It’s a simple meal that brings plenty of flavour without making meal prep complicated.
Ingredients
For the Beef
- 1 lb Nutrafarms grass-fed, free-roaming ground beef
- 1½ tbsp minced garlic
- 1 tbsp freshly grated ginger
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice wine vinegar
- Salt, to taste
- Black pepper, to taste
For the Creamy Gochujang Sauce
- 1 cup fat-free cottage cheese
- ¼ cup gochujang
- 1 tbsp maple syrup
- Pinch of salt
The maple syrup helps balance the heat of the gochujang while adding just a touch of sweetness.
For the Noodles
- Ramen noodles
- Chopped parsley, for garnish (optional)

Instructions
1. Cook the Beef
Add the Nutrafarms ground beef to a large pan over medium heat.
Allow it to cook for a couple of minutes, breaking it apart as it begins to brown.
Add the minced garlic, grated ginger, soy sauce, maple syrup and rice wine vinegar. Season with salt and pepper to taste.
Stir everything together until the beef is evenly coated. Continue cooking over medium heat, stirring occasionally, until the beef is fully cooked and the sauce has coated the meat.
2. Make the Creamy Gochujang Sauce
While the beef is cooking, add the cottage cheese, gochujang, maple syrup and a pinch of salt to a blender.
Blend until completely smooth and creamy, with no cottage cheese curds remaining.
Taste and adjust if needed. If you prefer a slightly sweeter, less spicy sauce, you can add a little extra maple syrup.
3. Cook the Noodles
Prepare the ramen noodles according to the package directions. They should take approximately 3–4 minutes to cook.
Once tender, drain the noodles well.
4. Add the Sauce
While the noodles are still warm, add the creamy gochujang sauce and toss until every noodle is evenly coated.
5. Assemble
Divide the creamy gochujang noodles between plates or meal-prep containers.
Top each serving with the seasoned ground beef and finish with chopped parsley, if desired.
Serve warm and enjoy!

Meal Prep Tip
Keep the beef and creamy noodles portioned in airtight containers in the fridge for an easy grab-and-reheat meal throughout the week. When reheating, adding a small splash of water can help loosen the sauce and bring back its creamy consistency.
Resolution Ready Tip: Meal prep doesn’t have to mean plain chicken and rice. Building meals around protein while using bold flavours and sauces can make staying consistent feel a whole lot easier.
