For the Chicken Marinade:
- 1.5 lbs (680g) Nutrafarms chicken thighs, boneless & skinless
- 4 tbsp Greek yoghurt
- 2 tbsp tomato paste
- Juice of 1 lemon
- 5 garlic cloves, minced
- 1 tbsp cumin
- 2 tsp chilli powder
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp salt
- 4 tbsp olive oil
For the Sheet Pan:
- 1 red onion, cut into 6–8 chunks
- 4 tbsp olive oil
- Fresh parsley + lemon slices, for garnish
For the Roasted Garlic Sauce:
- 1 garlic head
- ½ cup Greek yoghurt
- 3 tbsp mayonnaise
- Juice of ½ lemon
- 1 tsp black pepper
- 2 tbsp fresh parsley, finely chopped

👩🍳 Step-by-Step Instructions
Step 1 – Marinate the Chicken
Pat chicken dry and cut into large chunks. In a bowl, mix yoghurt, tomato paste, lemon juice, garlic, olive oil, and all spices. Add chicken and coat well. Marinate at least 30 minutes (overnight is even better).
Step 2 – Roast the Garlic
Preheat oven to 425°F (220°C). Slice the top off a garlic head, drizzle with olive oil and a pinch of salt, wrap in foil, and roast for 45–60 minutes until soft and caramelized.
Step 3 – Prepare the Sheet Pan
Spread the marinated chicken and onion chunks on a large sheet pan. Drizzle with olive oil.
Step 4 – Bake the Chicken
Roast for 30–40 minutes until chicken is golden brown, crisp at the edges, and cooked through. Baste with pan juices before serving.
Step 5 – Make the Garlic Sauce
Squeeze roasted garlic into a bowl and mash into a paste. Mix with yoghurt, mayo, lemon juice, pepper, and parsley. Taste and adjust seasoning.
Step 6 – Plate & Serve
Serve shawarma-style: with warm pita, over rice, or in a salad bowl. Add roasted onions, fresh parsley, lemon wedges, and a drizzle of garlic sauce.
