For the Chicken Marinade:

  • 1.5 lbs (680g) Nutrafarms chicken thighs, boneless & skinless
  • 4 tbsp Greek yoghurt
  • 2 tbsp tomato paste
  • Juice of 1 lemon
  • 5 garlic cloves, minced
  • 1 tbsp cumin
  • 2 tsp chilli powder
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 4 tbsp olive oil

For the Sheet Pan:

  • 1 red onion, cut into 6–8 chunks
  • 4 tbsp olive oil
  • Fresh parsley + lemon slices, for garnish

For the Roasted Garlic Sauce:

  • 1 garlic head
  • Β½ cup Greek yoghurt
  • 3 tbsp mayonnaise
  • Juice of Β½ lemon
  • 1 tsp black pepper
  • 2 tbsp fresh parsley, finely chopped

Step 1 – Marinate the Chicken
