Instructions
1. Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear.
Cook according to the package directions. A rice cooker works well if you have one.
2. Prepare the Vegetables
While the rice cooks, thinly slice the cucumber, carrot, avocado, and green onion.
Set everything aside so your ingredients are ready for assembly.
3. Cook the Shrimp
Remove the tails from the shrimp.
Heat a small amount of olive oil in a pan over medium heat. Add the shrimp and season with a pinch of garlic salt.
Cook for approximately 2–3 minutes per side, or until the shrimp are opaque and cooked through.
Remove from the pan and allow them to cool slightly.
4. Make the Spicy Shrimp Filling
Chop the cooked shrimp into small pieces and transfer them to a bowl.
Add 1 tablespoon of Kewpie mayo, Sriracha to taste, and the chopped green onion. Mix until the shrimp are evenly coated.
For more heat, use roughly equal amounts of Sriracha and mayo. For a milder version, simply reduce the Sriracha.
5. Season the Sushi Rice
Add a dash of mirin and rice wine vinegar to the cooked sushi rice.
Gently mix everything together and allow the rice to cool until it is comfortable to handle.
6. Prepare the Nori
Cut the nori sheets into smaller pieces, approximately the size of your palm.
This makes them easier to shape into individual hand rolls.
7. Assemble the Hand Rolls
Add a small layer of sushi rice to each piece of nori.
Wet your fingertips with a little water before handling the rice to help prevent sticking.
Add approximately 1 tablespoon of the spicy shrimp mixture, or roughly 2 shrimp per roll.
Top with cucumber, carrot, and avocado.
8. Roll Into a Cone
Roll the nori slightly on a diagonal to create a cone shape.
Use a small amount of sticky sushi rice along the edge of the nori to help hold the roll together.
9. Finish and Serve
Sprinkle the Shrimp Hand Rolls with sesame seeds and serve immediately while the nori is still crisp.
Enjoy them on their own or add a soy-sesame dipping sauce or extra spicy mayo on the side.

Why You'll Love These Shrimp Hand Rolls
Fresh and flavourful: Creamy avocado and spicy shrimp pair with crisp cucumber and carrot for plenty of flavour and texture.
Easy to customize: Adjust the Sriracha, switch up the vegetables, or let everyone build their own rolls.
Fun to make: Instead of worrying about perfect sushi rolls, each person can assemble a simple nori cone.
Great for sushi night: Put all the ingredients on the table and turn dinner into a build-your-own hand roll night.
Pro Tip
Prepare all your fillings before assembling the hand rolls. Once the rice, shrimp, vegetables, and nori are ready, the rolls come together quickly.
For the best texture, assemble them shortly before eating so the nori stays crisp.
Bring Sushi Night Home
These Shrimp Hand Rolls combine Nutrafarms shrimp, seasoned sushi rice, fresh vegetables, and creamy spicy mayo in a meal that's as enjoyable to assemble as it is to eat.
Set everything out, let everyone build their favourites, and serve with extra dipping sauce on the side.
