- 4 eggs
- 1/2 tbsp brown sugar
- 3 tsp 10% cream
- pinch of salt
- soy sauce to taste
Prep & Directions for Spinach:
- Blanch the spinach by placing it in boiling water for 30 seconds, then plunging it into cold water.
- Cut the spinach into thin strips.
- Squeeze out the excess water and place in a bowl.
- Add roasted sesame seeds and soy sauce.
- Mix well.

- Crack 4 eggs into a bowl.
- Add cream, brown sugar, salt, and soy sauce.
- Whisk until well combined.
- Cook until the eggs are about 90% finished, then set them aside for later.
