Summer Ground Beef Rice Paper Rolls
Ingredients
For the Rice Paper Rolls
- 1 lb lean ground beef
- 12 rice paper wrappers
- 3–4 cloves garlic, minced
- 2 tbsp gochujang
- 2 carrots, julienned
- 1 English cucumber, thinly sliced into long strips
- 1 head butter or romaine lettuce, leaves washed and cut in half
- ½ cup fresh cilantro, roughly chopped
- ¼ cup fresh mint leaves
For the Peanut Dipping Sauce
- 1 tbsp natural peanut butter
- 2 tsp soy sauce
- 2 tsp hoisin sauce
- A dash of rice vinegar
🍳 Instructions
1. Prepare the Vegetables
Wash and prep all of your vegetables before cooking.
- Julienne the carrots into thin matchsticks.
- Slice the cucumber into thin, long strips.
- Wash the lettuce and cut the leaves in half if they’re large.
- Roughly chop the cilantro.
- Pick the mint leaves from the stems and set aside.
2. Cook the Beef
Heat a large skillet over medium heat.
Add the ground beef and cook, breaking it apart as it browns. Once the beef begins to brown, stir in the minced garlic and cook for about 1 minute until fragrant.
Reduce the heat to low and add the gochujang. Stir until the beef is evenly coated and cook until fully cooked through.
Remove from the heat and let the beef cool slightly before assembling the rolls.

3. Make the Peanut Sauce
In a small bowl, whisk together:
- 1 tbsp peanut butter
- 2 tsp soy sauce
- 2 tsp hoisin sauce
- A dash of rice vinegar
Mix until smooth. If you’d like a thinner consistency, add a teaspoon of warm water and whisk again.

4. Assemble the Rolls
Fill a shallow dish or large plate with warm water.
Dip one rice paper wrapper into the water for about 10 seconds, making sure all sides are evenly moistened.
Place it onto a wooden cutting board or work surface.
Layer the fillings in the center:
- Lettuce
- Gochujang ground beef
- Carrots
- Cucumber
- Cilantro
- Mint leaves

5. Roll the Rice Paper
Fold the left and right sides of the wrapper inward.
Starting from the bottom, roll it up tightly like a burrito, keeping the fillings tucked in as you roll.
A tight roll helps the rice paper stay together and gives a better bite with less air inside.
Repeat with the remaining ingredients.

6. Serve
Serve immediately with the peanut dipping sauce and enjoy! These fresh, flavour-packed rolls are perfect for a light lunch, dinner, or summer appetizer.
